Scope
Addition of two new grease interceptors to accommodate large volumes of kitchen discharge flow from the existing kitchen facility.

Special Circumstances
Verify existing site conditions including existing waste piping and grease trap layout.
Perform dye testing of existing waste system.
Assess which existing fixtures are piped through the existing grease trap.
Modification of existing grease trap piping.
Addition of two 1,500-gallon grease traps in series downstream of existing modified grease trap.
Provision for two additional grease traps.
Coordination of new grease waste line with existing site utilities.
Addition of new sanitary sewer manhole in existing drive.
Reconfiguration of existing waste piping into grease traps.
